Sip Up: Catching up with Paul Henry

Paul Henry of Houndstooth Coffee on five drinks he loves, other than coffee.

Probably my favorite beer of all time. I typically pick up the bottled version, but every so often I’ll grab a 4pack of 16oz tallboy cans. There’s simply something right about drinking beer out of a can on a hot summer day.  Every so often, a bar will carry Torpedo on tap. If I see it on a tap wall, it’s like finding a $50 in a pants pocket.

2. Campari

It’s bitter.  It’s red.  I like it. Not a bad way to follow an IPA either.

.3. Water from Houndstooth Coffee

It’s [filtered by] an OptiPure reverse osmosis system. The water is filtered 6 times. The final stage of the system reinserts the appropriate mineral content for espresso. I have trouble drinking water anywhere else. It’s just too delicious.

4. Any beverage prepared by Francisco Terrazas

He’s the bar manager at Fino and a good friend.  He knows I lean toward bitter beverages and he keeps his bar stocked with hard to find Mezcal.  He’s an alcohol saint.

5. Sauternes
.
This is a French wine made from moldy grapes.  It’s the perfect post dinner beverage, and I prefer it over ports.  It’s a cleaner, more dynamic sweetness.  I absolutely love it but only in small doses. I imagine I could drink a whole bottle if I let myself.
